I love rotisserie chicken, but after I have dinner and a sandwich for lunch for two days, there is still a lot of chicken there. I can’t bare to throw it out anymore. So if you are tired of throwing out the rotisserie chicken….here’s a receipt that I just made. Looks good….but taste test pending:
Place the entire left over chicken in a pot large enough to hold water that will nearly cover the fowl. Boil uncovered until the meat falls off the bones. Cool in the fridge until you can handle without being burned.
Prepare minute rice as directed for 2 servings.
Place cooked rice in a 1-½ casserole dish and add the following:
½ cup chopped onion
½ cup sliced celery
½ cup broth from boiling the chicken
1 to ½ cups of chicken (make sure it is free of bones)
1 cup of pitted black olives
Mix all together
Spread ½ cup sharp cheddar over the top
Cover and bake @ 350 degrees until slightly bubbly – about 45 minutes
Remove cover for the last 5 minutes and let the cheese brown just a bit.
Now it’s time for lunch and taste testing the casserole:)
